Last night for dinner I wanted to make something different. I had 3 green peppers and so stuffed bell peppers were calling my name. I found a recipe that called for 6 bell pepper but I cut everything in half for my family of 3 eaters (1 nursing baby) and ended up improvising ingredients to what I had handy, they turned out delish! There was just enough to stuff the large peppers and little left over for Liam to eat from the bowl.
What You'll Need
1/2 poundlean ground beef
4 clovesgarlic, minced
1/2onion, chopped
3 green bell peppers
1 (8 ounce) cannatural tomato sauce
1 tablespoonSoy Sauce
salt and ground black pepper to taste
1/4 cup of Shredded Low fat Mozzarella cheese
1 teaspoonItalian seasoning
Grated Parmesan cheese, optional
Directions
Preheat oven to 350 degrees F (175 degrees C)
Cook and stir beef, garlic, and onion in a skillet over medium heat until meat is evenly browned and onion is softened, about 5 min (drain fat)
Remove and discard the tops, seeds, and membranes of the green bell peppers. Arrange peppers in a baking dish with the hollowed sides facing upward. Slice the bottoms off the peppers if necessary so that they stand upright.
Mix the browned beef, cooked rice, 1/4 of Shredded mozzarella, 1/2 can tomato sauce, soy sauce, salt, and pepper in a bowl. Spoon an equal amount of the mixture into each hollowed pepper. Mix the remaining tomato sauce and Italian seasoning in a bowl, and pour over the stuffed peppers, top with a sprinkle of shredded cheese.
Bake in the preheated oven, basting with sauce every 15 minutes, until the peppers are tender, about 1 hour (25 min in convectional oven). Sprinkle the peppers with grated Parmesan cheese after baking.

This is them after. The filling seemed to shrink a bit so don't be afraid to over stuff them. I served them sliced tomatoes and avocado (Which I did not photograph) I didn't want them as saucy so I didn't base them with the remaining sauce but Im sure it would be just as yummy. Enjoy. Perfect! I just got back from Aldi with the ingredients. They have lean ground beef and their ground turkey is good too but goes fast. Sams ground turkey is good as well. I have been on bed rest since Feb so it is hard keeping the weight off! (Especially since everyone kept sending food and candy!)
